MEET CHEF ALBERT
How did you get into food and cooking?
I was pretty much was raised in a kitchen. My parents own and ran a Canadian Chinese restaurant.
When did you know you wanted to be a chef?
I knew I wanted to be a cook when I was cooking for friends at my parent's restaurant. Trying to trap my friends with food to stay with me at work. I got enjoyment from feeding the people and seeing the smiles from them eating.
What is your best food memory?
Best memory ever... 2010 Olympics in Vancouver. Cooking for all the hockey teams.
Who in the food world do you most admire?
Anthony Bourdain is my spirit animal.
How do you get your inspiration?
My inspirations come from cooking with friends. I run a Sunday dinner cooking club. Where we have a different theme or challenge every week!
Fave dish off our menu right now?
Chicken sausage eggs Benny. The hollandaise is to die for here.
Best cooking tip you could give someone [new] in the kitchen?
Best advice I could pass onto the up and coming cooks... Be patient. The food industry is not an easy industry. The road to the top is never a straight line. Sometimes you have to take 2 steps back before getting to where you need to be.
